SIMON STEL WINES

They say good fences make good neighbors, but it was a love of wine and winemaking.

As the sun casts golden hues over our vineyards, harvest time becomes a celebration of nature’s bounty. Each grape cluster is a testament to the season’s challenges and triumphs, and our vineyard comes alive with the anticipation of the wines these grapes will produce.

In the crisp morning air, hands deftly select and pick the best grapes, ensuring only the finest go into our wines.

Once picked, the grapes undergo destemming, a process that separates the fruit from its stem, ensuring purity and preventing any unwanted bitter flavors.

This is where the magic truly happens. The grapes are left to soak, allowing flavors, colors, and tannins to extract. Simultaneously, fermentation begins, turning the sugars into alcohol and giving the wine its body and character.

Once the wine has reached its optimal profile, it is carefully transferred to bottles. Here, in the quietude of our cellars, it matures, refining its flavors and achieving the depth and nuance that Simonstel wines are celebrated for.
